The Possibilities Are Endless!

Below you will find a list of foods that pack a solid source of goodness, and also links for delicious and exciting recipes to try!

  • Apples
    • So many choices! Sweet or tart apples can be enjoyed raw or baked into a delicious dish! Apples are full of antioxidants and have four grams of dietary fiber per serving. That alone makes apples a win-win!
  • Brussels Sprouts
    • With a mild, somewhat bitter taste, brussels sprouts have been given a bad rap! If made the correct way, these veggies can be divine! They are a great source of iron and vitamin K.
  • Pears
    • Sweet and juicy, pears can be a real crowd pleaser when baked or poached. They are an excellent source of vitamin C and copper.
  • Rutabaga
    • Not as wildly popular, the rutabaga is a cross between a turnip and a cabbage. They are delicious in casseroles or pureed for savory soups. They’re also a great source of fiber and vitamin C.
  • Cauliflower
    • Sweet and slightly nutty in flavor, cauliflower is a great winter vegetable. You can steam it, or blend it to create a mashed potato-like texture! Cauliflower is also an excellent source of vitamin C and contains compounds that may help prevent certain types of cancer!
  • Squash
    • Not to be confused with summer squash, winter squash has a finer texture and a slightly sweeter flavor. Due to its thick skin, it can be stored for months. Add a hint of cinnamon or ginger to bring out its fall flavoring. Squash contains omega-3 fatty acids and is a great source of vitamin A.
  • Pumpkin
    • Pumpkin is also a type of winter squash and can be used for much more than just Jack-o’-lanterns! It has a sweet and moist texture—ideal for pies, cakes, and cookies! It’s also rich in potassium and B vitamins.
  • Sweet Potatoes
    • Not just a Thanksgiving staple, sweet potatoes are much more nutritionally dense than the average white potato. Try roasting them instead of just making them into a casserole! They are a great source of iron and vitamin A, and also offer anti-inflammatory benefits.
  • Pomegranates
    • Mildly sour but a powerhouse for antioxidants, the juice of this fruit provides a great base for tangy marinades and sauces. Don’t throw away the seeds, as they can be tossed into salads for added flavor! Pomegranates are a great source of vitamin C and folate.
  • Turnips
    • These root vegetables are tender and mild, and are a great alternative to radishes and cabbage. There are a variety of ways to flavor them, from using bread crumbs to adding brown sugar. The turnip leaves themselves are an exceptional source of vitamins A and K, and also folate. The root is a great source of vitamin C.
